This Pineapple Mojito is the perfect piña colada twist on one of our favorite cocktails. A few extra simple ingredients kicks this mojito up a notch and will make it your favorite too!

This amazing drink is a tropical twist on one of my favorites, the classic mojito. The flavors of mint and lime combine perfectly with the flavors of a pina colada, bringing this amazing drink to life.

THE MOJITO

The classic mojito is a muddling of mint leaves, lime juice and simple syrup. You then top it with rum, and club soda. It is a delicious and refreshing cocktail that I have spent many an hour getting to know better.

HOW TO MAKE A MOJITO A PINEAPPLE MOJITO

This recipe could also be called a piña colada mojito because like the piña colada we are using the flavors of pineapple, coconut, and rum to make a refreshing and delicious drink.

In the bottom of your high ball glass muddle together mint leaves, simple syrup, lime juice and pineapple juice. If you have never muddled, fear not! After you make one of these you will want to buy a muddler. Until then, use the bottom of an ice-cream scoop. Just gently rub the mint leaves into the other ingredients. They will release their juice adding the best taste to this drink.

Add in the coconut rum.  If you don’t have any coconut rum on hand, use regular and just enjoy the pineapple taste of this drink. My favorite non flavored rum is Bacardi. It works great in this mojito recipe.

Fill the glass the rest of the way up with ice. A good mojito is nice and cold.

Top with club soda. If you want to kick the coconut flavor up a notch you can use coconut sparkling water like I did in my Pina Colada Vodka Soda.

A NOTE ABOUT SIMPLE SYRUP

I have my own recipe for how to make simple syrup. It is just as the name implies: simple. I think it is totally worth making at home and keeping a batch in the refrigerator. If you don’t, just pick some up at the store when you buy your rum and mint leaves! They sell it with the alcohol.

Do you like how you can even see the muddling marks on the mint leaves? They were so fresh and perfect in this cocktail.

Pineapple Mojito

It's like a Pina Colada and a Mojito had a fantastic baby with this amazing Pineapple Mojito! This recipe comes together so fast and is the amazing tropical cocktail you are looking for!

Ingredients

  • 6 mint leaves divided evenly between the two glasses
  • 3/4 ounce simple syrup
  • 3/4 ounce fresh lime juice
  • 1 1/2 ounces coconut rum
  • 2 ounces pineapple juice
  • 2 ounces club soda

Instructions

  • In a high ball glass, muddle together the mint leaves, simple syrup, and lime juice.
  • Add ice.
  • Add in the remaining ingredients, stir, and enjoy.
