If you ask my kids what they want for lunch, literally any day of the week, they will say mac ‘n cheese. I’m not kidding. It doesn’t matter if they had it the day before, it doesn’t matter if they had it the last three days. Mac ‘N Cheese.
And their favorite kind of mac ‘n cheese is Horizon. It’s what we always give them. I love it because it has organic ingredients, 7 grams of protein, and it’s a fast meal for them. They love it because it’s delicious. Duh.
So let’s talk about this quick and easy lunch option that I kicked up a notch. You start with a Horizon Microwaveable Mac and Mild Cheddar Cheese.
Pour in 1/3 cup of water. Note: This is less than the amount that Horizon suggests, because we are going to toss in some veggies that will add moisture.
Microwave for two minutes. Stir in the packet of cheese.
Now toss in 1/4 cup frozen peas and carrots. Yup. Frozen. Right from the freezer.
Let it sit for a minute. And yummy! Enjoy!
I love this as a quick easy meal for my kids at home, but also for college kids! A bunch of these and a bag of frozen veggies in their mini fridge? Perfect. Also for at work! Keep a bag of frozen veggies at work, or just bring them along in a baggie, it’s cool if they thaw a little.
True story: This bowl got packed up in a tupperware and sent with Gavin to school the next day. He loved it! Ate every last little bit. Sent with a cut up apple, it was a lunch that I felt awesome about. Way better than hot lunch, and cheaper too.
Three Minute Veggie Mac
- 1 cup Horizon Microwaveable Mac and Mild Cheddar Cheese
- 1/3 cup water
- 1/4 cup frozen peas and carrots
- Take the packet of cheese out of the container.
- Add 1/3 cup water. Microwave for 2 minutes.
- Stir in the cheese packet. Stir in the frozen veggies.
- Let sit for one minute and enjoy!
