These Easy Baked Potato Wedges come together so fast, and make such a great side dish for so many dinners! With only three ingredients, this is a side dish that can’t be beat.

Happy Monday, friends! Did you guys have a good weekend? This weekend our oldest kiddo did his first ever sleep over. We have been pretty adamantly against sleep overs for a while now, but we decided (after a good conversation with the other parents that might have left them thinking we are totally nuts . . . ) that we would give it a chance. It went awesome! We picked up a very tired but very happy 10 year old yesterday.

So, one thing that I don’t have enough of on the blog is side dishes. Easy sides that you can feel really great feeding your family. These roasted potato wedges, totally fit the bill. They are only three ingredients and require only 10 minutes of hands on time. Serve them with my Baked Chicken Tenders and dip them in my copycat Chick Fil A Sauce.

How to Make Potato Wedges

These are so easy to make and they come out perfect every single time!

  1. Toss the cut up potato wedges with oil and grill seasoning.
  2. Spread them on an even layer on a baking sheet.
  3. Bake them for thirty minutes and flip them half way though.

How to Cut Potato Wedges

The key to this recipe turning out right is cutting thin enough wedges so they cook well. I got a good 7 to 8 slices out of each potato, and they came out totally soft in the middle, but with a nice crispiness on the edges.

You want to cut them in half and then in half again and then cut each fourth in half as well.

How to Make Potato Wedges in the Air Fryer

If you have an air fryer, this is the perfect recipe to try out in it!

  • Cook them in the air fryer for 15 minutes at 400 degrees.

Easy Potato Wedges

Serves: 4 people

Prep: 10 minutes
Cook: 30 minutes
Total: 40 minutes
These Easy Baked Potato Wedges come together so fast, and make such a great side dish for so many dinners!  With only three ingredients, this is a side dish that can’t be beat.

Ingredients

  • 2 large baking potatoes cut thin (about 7 to 8 slices per potato)
  • 2 tablespoons grill seasoning
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 400 degrees.
  • In a large bowl, mix together the potatoes, olive oil, and grill seasoning so that the potatoes are well coated.
  • Place the potatoes on a silicon mat lined baking sheet (parchment paper will work too) in a single layer.
  • Bake for 15 minutes, take the potatoes out, flip them, and bake for 15 more minutes.

    Oh you poor dear lady .. I remember those days oh so well and sure am glad I am a grandmother now. Its hard on a person with a newborn as each new child is different and oh so unique with their qualities. My oldest daughter when all 3 of her girls were born used a Teddy Ruxbin bear that held a cassette to talk to the child when she didn’t want to sleep and Mom was so exasperated with reading to her. After about 10 minutes the child was asleep,
    Sometimes a calm soothing voice is all a baby needs to go back to sleep and give Mom some peace of mind. Maybe a radio on easy listening music …

    Just remember it will get better with time and when your little one is 16 years old .. remember these days … ;-)

    Hi, I’d like to know what your “Grill Seasoning” is made of? Would you let me know the ingredients, or if it’s store bought, what brand you buy? These potato wedges look amazing and I’d like to try them. Thank you!

      I use McCormick’s brand. I think whatever brand you use, you just need to really like the flavor of it since it’s so key to this recipe.

    I made these last night mainly for my 2 teenage sons. AMAZING! They were impressed! I didn’t have any grill seasoning so I used Tony Chacheres. It worked fine but I want to try the grilling seasoning you recommended for our next attempt at these. Love that this was simple and yielded a great tasting side for us that only called for 3 ingredients!
