This Roasted Baby Potatoes Recipe makes such an easy and delicious side dish. With only five ingredients and five minutes of prep time, it is the perfect accompaniment to so many dishes.

Our family loves this baby potato recipe so much. In fact, I have one kiddo who does fist pumps every time they see it land on the table. It is the perfect last-minute side dish recipe.
One of my favorite parts about this recipe is that it is simple enough to make for a weeknight meal, but delicious enough to put on your holiday table. These oven roasted baby potatoes are melt in your mouth delicious.

Ingredients for Baked Baby Potatoes
- Boomer gold baby creamer potatoes: Creamer potatoes are small and buttery, which makes them perfect for this recipe. Any small type of potato will work, such as baby Yukon golds, just make sure that they are smaller than two inches and cut in half. For best results, stick with creamer potatoes.
- Butter: Melted butter coats the potatoes, adding a rich, savory flavor and helps the potatoes develop a golden exterior as they roast.
- Minced garlic: Fresh garlic adds such a delicious, savory flavor to the potatoes.
- Salt and pepper
How to Make Roasted Potatoes

Prepare the Potatoes and Sauce
After cleaning and cutting the potatoes, melt the butter and whisk in the garlic. Toss the butter mixture with the potatoes to coat them in a large mixing bowl.


Bake the Potatoes
Spread the potatoes on the prepared baking sheet pan, cut side down. Bake for 20 to 25 minutes or until the potatoes are fork tender.

Variations

- Add in some cheese: These are amazing as is, but cheese always makes things delicious. You could sprinkle over a little freshly grated Parmesan cheese at the end of this recipe.
Storing and Reheating Leftovers
Store any leftover roasted creamer potatoes in an airtight container in the refrigerator for up to three days. Reheat the portion you plan to eat in the microwave, oven, or air fryer until heated through.

Roasted Baby Potatoes Recipe
Ingredients
- 1.5 pounds unpeeled boomer gold creamer potatoes cut in half, see note 1
- 3 tablespoons unsalted butter melted, see note 2
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- ground black pepper to taste
- fresh parsley optional
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and set aside.

Notes
- Any small type of potato will work for this recipe. Make sure that they are smaller than two inches and cut in half. For best results though, stick with creamer potatoes.
- To make this recipe dairy-free, use 3 tablespoons of olive oil instead.
- This recipe was originally written to bake in a casserole dish. However, depending on the size of the casserole dish, the potatoes were not fully cooked for some readers in the time listed. In this newer version, the potatoes cook perfectly in the time listed and get a little browned on the bottoms too, which is a nice addition.

I made these along w/roasted onions & multi-colored mini peppers
. Cannot get over how delicious they were. Was in the UK last October w/my UK /American friend, stayed @ her flat & went for a traditional Sunday roast @ a gorgeous pub. She was anxious for me to try the roasted potato’s which were great & mine tonite were just as/or better. My husband loved them. Will certainly make again. So easy as well as tasty.

I’m making these tonight with our dry-rubbed ribs in the oven! I hope they turn out as pretty and yummy as your pictures. :)
On a side note, I work for Meals on Wheels and I know we are always looking for volunteers to help us deliver meals locally to seniors in need. It would be a great activity to do with the family throughout the year. For my local chapter, we deliver Monday through Friday between 11-1. Off for the holidays, but there are plenty of days in between to get involved. You should look into it!

It sounds silly, but there really isn’t a better recipe for simple roasted baby potatoes. I really appreciated finding this recipe at the last minute – as I was cutting up the baby potatoes. I sprinkled a little dried rosemary over these and cooked alongside some bone-in chicken thighs for 1 hour at 350 degrees. They turned out perfect – and got me some accolades from the wife and kid. I’d always used oil before this – but this easier and simpler recipe is just straight-up better in every way.

We love roasted potatoes. They’re such an easy side dish to toss together quickly and they always taste so good! These go great with just about any main dish meat, but we especially like them with grilled steaks.
